It is this sense of discovery—of stepping outside the familiar—that makes a destination memorable. This time, Urban Research heads to San Antonio, Texas, about a two-hour drive from Austin. The city's draw isn't simply its history or its River Walk, but a hotel that tells the story of both: Hotel Emma. The building began life nearly 120 years ago as a brewery. San Antonio's abundant spring water made it an ideal place for brewing, while successive waves of German immigrants brought with them a deeply rooted beer culture. Along the river, the San Antonio Brewing Association grew steadily, becoming the largest brewery in Texas by 1916.Behind that success was an unlikely figure. Emma Koehler took over the brewery after her husband's death and steered the company through Prohibition, when breweries across America were forced to close. Rather than surrender, she reinvented the business, producing near beer, soft drinks and ice cream until alcohol became legal again. Local legend has it that, at midnight on the day Prohibition ended, one hundred trucks loaded with beer rolled out of the brewery within fifteen minutes. In 2015, the brewery was reborn as Hotel Emma, carrying her name while preserving the soul of the original industrial complex. Rather than disguising the building's past, the renovation celebrates it. A striking crimson compressor—once essential to lager production—anchors the lobby. Beneath soaring 7.5-metre ceilings, guests sip cocktails from seats fashioned out of former fermentation tanks. Chandeliers in the ballroom incorporate parts of the brewery's original bottling machinery, while traces of the site's industrial life quietly reveal themselves throughout the property. The hotel's most unexpected space may be its library. It houses the personal collection of more than 3,700 books assembled by San Antonio novelist and urban planner Sherry Kafka Wagner. First editions, signed copies and decades of thoughtful collecting line the shelves, making the room feel less like a hotel amenity than the private library of someone who spent a lifetime in conversation with books. Yet Hotel Emma is only part of a much larger story. What makes it remarkable is the neighbourhood that has grown around it. Across the street sits the Texas campus of the Culinary Institute of America, drawing acclaimed chefs and ambitious restaurants to the area. Farmers' markets animate the riverfront on weekends. Nearby, Pullman Market has transformed a former industrial site into one of the city's most compelling food destinations, while Stable Hall—once home to the brewery's draft horses—has become a lively venue for music and performance, just a short walk away. Together, these places form an ecosystem rather than a collection of attractions, with Hotel Emma at its centre. The district has the intimacy of a small town embedded within a major city. It is a reminder that adaptive reuse is not merely about preserving old buildings.
